Make this VERY EASY and VERY TASTY guacamole!

 

 
 

Why this step works:

You might be surprised to learn that one of the suggestions I make most often to clients is to include more fat in their diets.


We absolutely need fat; it provides essential nutrients such as vitamins A, D, E & K, keeps us feeling full for longer after meals and helps to keep sugar cravings in check. Including good quality fats in the diet is essential for just about every aspect of health including mood, memory and concentration, immune, gut, skin and heart health, hormone balance, energy levels and the ability to bounce back from stress. Including optimal amounts of good quality fat in the diet is also crucial for achieving and maintaining a healthy weight. As an added bonus, fat often makes meals much tastier too!


This Little Step is one very simple way to help you include good quality fat in your diet. I’ve made and recommended this recipe countless times over the last few months because it’s quick and easy, very tasty, pairs well with lots of different dishes and ticks lots of nutrition boxes.  The avocados and olive oil will deliver good quality fats to your plate; every other ingredient is loaded with health benefits too. 

A VERY EASY and VERY TASTY guacamole


(Serves 6-8)

You will need:

  • ½ small red onion (finely chopped)

  • 1-2 fresh red chillies (deseeded and finely chopped)

  • 3 ripe avocados

  • 1 bunch fresh coriander (tough stalks removed, leaves roughly chopped)

  • 6 ripe cherry tomatoes (quartered)

  • Juice from 2 fresh limes

  • 1 tablespoon extra-virgin olive oil

Method:

  1. Half the avocados, remove the stones, scoop the flesh into a mixing bowl. (Remember to scrape the flesh from the inside of the avocado skin with a teaspoon, as this is where the most nutritious bits are)

  2. Add the rest of the ingredients to the mixing bowl with the avocado

  3. Use a knife to chop the avocado and gradually combine all the ingredients together

  4. Keep chopping until you have the consistency you like. Make this as chunky or as smooth as you like


Making fresh guacamole from scratch may seem like a bit of a faff but is well worth it from a taste and nutritional point of view, and only takes about 10 mins from start to finish. It works really well with grilled or barbequed meat, chicken, fish or halloumi and salad. In fact, if we’re doing a BBQ, I’ll usually add guacamole and leave out the buns.
